VEGAN CINNAMON OATMEAL RECIPE

With the glistening icy flakes dropping from the barren sky, winter has arrived with open arms for those who well long for a heart-warming bowl of delight; Delight in the form of sensational vegan apple cinnamon infused oats that once consumed, there’s no turning back.

Often times catching myself crafting this recipe, it has undoubtedly become one of my favourites. Not only are oats delicious but they are extremely beneficial for our health and mental well-being. Packed with antioxidants, vitamins and minerals, oats are a natural superfood that aids with weight loss, maintains crystal clear complexions and to more extremes, lowers blood pressure and even reduces the risk of heart disease. Need I say more?

To ensure optimal healthy vegan cooking, I minimized the reliance on sugar (a big no no), by adding medjool dates and apples which, when combined, creates the desired ‘sweet’ flavour that so many long for. With the beauty of being able to customize this recipe by adding toppings to your heart’s desire, this is certainly the route to indulge in this season.

INGREDIENTS

1 cup rolled oats

2 cups of boiling water

2 medjool dates, chopped finely

1 red apple chopped into small pieces

½ teaspoon cinnamon

½ cup of vegan oat/rice/soy/almond milk (optional)

INSTRUCTIONS

STEP 1 // Place the oats, two cups of water and cinnamon into a small pot on high heat and bring to boil. Ensure you stir occasionally

STEP 2 // Reduce to low-medium heat and continue stirring until all the water has been absorbed by the oats

STEP 3 //  Place the oats in a bowl and add the chopped apples and dates as the topping

STEP 4 // Pour the vegan milk over the meal

STEP 5 // Add a dash of cinnamon to finish
